Chicken Thighs

BBQ Chicken Thighs
1. Preheat oven to 400 degrees.
2.Coat chicken on all sides with olive oil, salt, and pepper. Place chicken skin side down on a foil lined baking sheet. Bake for 25min.
3. Remove chicken from oven and increase temp to 425.
4. Coat top of chicken with BBQ sauce, flip chicken over, and baste opposite side. Bake for 7min.
5. Baste top of chicken with BBQ sauce, Bake another 7min.


Johnny's Seasoning Thighs
1. Preheat oven to 400 degrees.
2.Coat chicken on all sides with olive oil, salt, pepper, and Johnny's Seasoning. Place chicken skin side down on a foil lined baking sheet. Bake for 25min.
3. Remove chicken from oven and increase temp to 425
4. Flip chicken over and bake 7min.

Broccoli
A good side dish to add to this recipe.
Coat broccoli in olive oil, salt, pepper, and Johhny's Seasoning if desired.
Place on a foil lined baking sheet.
Put in the oven with the chicken, remove when blackened.

Keto Alfredo

The Ingredients:
1/2 Cup Butter
2 cloves Garlic, minced
2 Oz Cream Cheese
1 1/2 Cup Shredded Parm
2 Cup Heavy Whipping Cream
Dash of ground pepper

The Process:
Melt butter in medium saucepan over medium heat. Sautee garlic in the hot butter until fragrant.
Blend in the remaining ingredients and simmer for 10min until the sauce has thickened.

Keto Crackers

The Ingredients:
2 Cups of Shredded Cheese (I combined Swiss, Gruyere, and Cheddar)
1 Cup Almond Flour
2 Oz Cream Cheese
1 Egg
1/2 tsp Salt
1 tsp Garlic Powder (Other options: Rosemary or Spicy Chili-use a half amount for spicy powders.)

The Process:
1.Mix all the cheeses (including the cream cheese) along with the almond flour in a microwave safe bowl and cook for 1 minute.
2.Immediately stir the ingredients until the almond flour and cheeses have combined fully. Cheese should be partially melted.
3.Allow this to cool for a few minutes before adding the egg.
4.Add the egg, salt, and garlic powder.
5.Mix until fully combined
6.Place the ball of dough on a large sheet of parchment paper. Place another sheet of parchment paper on top. Roll out the dough to the size of you sheet pan. Thinner dough will cook faster.
7. Use a pizza cutter to cut crackers into squares
8. Bake these crackers at 450 for 5-6min on each side. It may take 7-9min to get a crispy cracker. Use the parchment paper to flip the dough onto the pan halfway through cooking.
9. Allow the crackers to cool for 5min.
Makes 10 servings.

Keto Biscuits

The Ingredients:
1 1/2 Cup Almond Flour
1/4 tsp Salt
1 Tbsp Baking Powder
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
2 Eggs
1/2 Cup Sour Cream
4 Tbsp Butter, melted
1/2 Cup Shredded Cheddar Cheese

The Process:
Preheat oven to 450.
Mix all the dry ingredients together
Combine all the wet ingredients in a separate bowl.
Mix Well
Spray muffin tin with non stick cooking spray. Evenly divide the batter into the 12 cups.
Cook 10-13 min

Keto Pancakes

The Ingredients:
1/2 Cup Almond Flour
1/2 Cup Cream Chesse
4 Eggs
1/2 tsp Cinnamon
1 Tbsp Butter for frying

The Process:
Combine almond flour, cream cheese, egg, and cinnamon in the blender.
In a frying pan, over medium heat, melt butter
Pour 3 Tbsp batter into the pan, fry for 3 min on the first side and 1 min on the flip side.

*Omit the cinnamon and fry a double large pancake to make a sandwich wrap or mini pizza crust.

Creamy Sun Dried Tomato Chicken

We poured the sauce over Sous Vide cooked chicken and it tasted like pizza. So good.

The Ingredients:
1 Tbsp Sun Dried Tomato Oil
2 Tbsp Minced Garlic
7oz jar Sun Dried Tomatoes, drained
1 Red Bell Pepper
1.5 Cup Coconut Milk
1 Tbsp Tapioca Flour
1/3 Cup Parmesan Cheese
2 Tbsp fresh shredded Basil

The Process:
Put the oil in a skillet and saute the garlic. Add the tomatoes and bell pepper, saute until just tender. Reduce heat to Med-low and add the milk and bring to a gentle simmer. Add the tapioca flour and season with salt and pepper, quickly stir to combine. Add the cheese and allow to melt. Pour over cooked chicken, top with basil.

Pumpkin Chicken Curry

The Ingredients:
1 can Coconut Milk
2 Tbsp Red Curry Paste
2 Tbsp Soy Sauce
1 Tbsp Coconut Sugar (or brown sugar)
2 Cups Sugar Pumpkin Pie (3/4 inch cubes)
1.5 Chicken Breast
1 tsp Salt
1 Red Bell Pepper, sliced
3 heaping cups of Spinach
1 Lime, juiced

Toppings:
Lime wedges, cilantro, toasted cashews

The Process:
In the bowl of the crockpot stir the coconut milk, curry paste, soy sauce, and sugar. Add the pumpkin and chicken until it is submerged in liquid. Cook on low 8 hours or high for 4 hours. Switch the cooker to high if it is not already, shred the chicken, and season the liquid with salt. Add the spinach and bell peppers, cook for 10-15min longer until the spinach is wilted. Add the juice of 1 lime.
Serve over rice with extra lime, cilantro and cashews.
