Sweet Potato Queso Dip

The Ingredients:
2 Cups Mashed White Sweet Potato
1 Cup Water
1 1/2 tsp Salt
1/2 tsp Chili Powder
1/4 Cup Nutritional Yeast
1 tsp Lemon Juice
1 14.5oz can Diced Tomatoes w/ green chilis

The Process:
1. Cut the sweet potato into small chunks. Boil or steam the sweet potatoes until fork tender. Drain. Mash with a fork.
2. Combine the sweet potato, water, salt, chili powder, nutritional yeast, and lemon juice in a high speed blender. Blend until smooth.
3. In a small pan heat the tomatoes over medium heat. Add the sweet potato mixture and combine until smooth. Serve warm.

Additions:
Adding shredded chicken to this dish would work well. And would be delicious as a dip at parties.
